The “breadless” sandwich snack
Looking for something refreshing to snack on? Search no further ladies; try out these “breadless” cucumber sandwiches.
I know the word “breadless” caught your attention. This statement means limited carb intake and is a winner for those looking to cut back on their carbohydrates. I know some of us (cough cough – me) are carboholics. Not all carbs are bad; however, it can make us feel sluggish and pack on the pounds if consumed in excess.
Instead of bread slices, you use cucumber slices…genius I know! Cucumbers are made up of 95% water which makes them a great source of hydration for the body. AND they are low-calorie and filled with vitamin C.
This recipe is another Pinterest find (do you Pinterest? I am new to the space but lovin’ it!!). It is a simple and quick snack that calls for limited ingredients. The recipe is originally from a blog entitled The World According to Egg Face (strange title – I know). The original recipe calls for:
- - Cucumber slices
- - Cold Cuts (Roast Beef)
- - Sliced Cheese
Basically you are creating bite sizes sandwiches using cucumber as the outer layer and the meat and cheese to fill the middle. You can use these as a snack, an addition to your lunch or even as a healthy appetizer at your next party. I would suggest using low sodium cold cuts – keep it as healthy as possible. You can mix and match the meat and cheese as you please. Test out some turkey and cheddar or perhaps you are a ham and swiss type of person. And if you are not a cold cut fan (not highly recommended as you don’t know what kind of preservatives are used to keep the cold cuts fresh), you can use the leftover grilled chicken or turkey you cooked from the night before. If you are a vegetarian or vegan, try your own meatless version. I’m sure it will taste just as delish. Whatever your passion – enjoy the creation!
